Oven Crispy Chicken

1 pound of boneless chicken
3/4 cup fat-free Italian dressing
4-5 cups of wheat cereal

Preheat oven to 350° F. Cut the chicken into bite sized pieces or strips as desired. Marinate the chicken in the Italian dressing for 30 minutes or overnight as time permits.
Meanwhile, crunch the cereal by hand into coarse crumbs and coat each chicken piece individually. Bake the chicken on a sheet pan 15-20 minutes until done.
Serves 5.
Dipping Sauce:
Combine 3/4 cup fat-free mayonnaise
1/4 cup Dijon mustard
1/4 cup of honey
