Pan Seared Salmon with Jicama Slaw and Mango Couli

4 salmon filets (3-4 ounces each)
cracked pepper as needed
4 very thin slices of smoked ham
2 tablespoons of olive oil

2 ripe mangoes peeled, seeded and chopped
2 tablespoons fresh jalapeño pepper,
   seeded and chopped


Lay the fish filets in a pan and coat each with the pepper.  Wrap each salmon filet in a slice of smokes ham.

In a saute pan, heat the olive oil and sear the salmon on both sides until cooked through, about 8 minutes.

Puree the mango and jalapeño in a food processor until smooth.

Serve with the jicama slaw and mango couli.
